Ingredients
- 1 3/4 cups crushed graham crackers
- 1 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/4 cup white sugar
- 1/4 cup brown sugar, packed
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp kosher salt
- 1/4 tsp ground cinnamon
- 1/2 cup unsalted butter, cubed
- 1 large egg
- 1/2 tsp vanilla extract
- 1/4 cup molasses
- 1/4 cup whole milk
- 1 cup heavy cream
- 1 1/2 cups milk chocolate pieces
- 2 cups miniature vegan marshmallows
- 1 tbsp light corn syrup
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, flours, sugars, baking soda, baking powder, salt, and cinnamon; whisk until blended.
- Cut in cubed butter until mixture resembles coarse crumbs.
- In another bowl, whisk together egg, vanilla extract, molasses, and milk; add to dry ingredients and mix until just combined.
- Scoop tablespoon-sized balls onto a lined baking sheet.
- Bake for 10-12 minutes or until edges are lightly golden; cool slightly.
- For filling, heat cream until boiling; remove from heat and stir in chocolate pieces until smooth. Fold in marshmallows and spoon onto half the cookies; top with remaining cookies to create sandwiches.
