Instructions
- Preheat your oven to 425°F (220°C). Pound chicken breasts to 1/2-inch thickness and season with salt and pepper.
- Set up three shallow dishes: one with flour, one with beaten eggs, and the third with panko breadcrumbs mixed with grated parmesan, Italian seasoning, and garlic powder.
- Dredge each chicken breast in flour, dip in eggs, then coat thoroughly in the breadcrumb mixture.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Cook each chicken breast for 3-4 minutes on each side until golden brown.
- Spoon marinara sauce over the chicken and top with shredded mozzarella cheese. Transfer the skillet to the preheated oven.
- Bake for 15-20 minutes until the chicken reaches 165°F (75°C) internally and the cheese is melted and bubbly. Allow to rest for 5 minutes before serving.
