- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon (5g) baking soda
- 1 teaspoon (2g) cinnamon
- 1/2 teaspoon (2g) salt
- 3 cups (240g) old-fashioned oats
- 1 cup (150g) raisins
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together unsalted butter, brown sugar, and granulated sugar until smooth.
- Mix in eggs and vanilla extract until well blended.
- In another bowl, whisk together all-purpose flour, baking soda, cinnamon, and salt.
- Gradually combine the dry ingredients with the wet mixture until just mixed.
- Fold in old-fashioned oats and raisins evenly into the dough.
- Drop rounded tablespoons of dough onto prepared sheets about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden; centers may appear underbaked.
- Allow cookies to cool on sheets for 5 minutes before transferring them to wire racks.
