- 1 pound ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 medium potatoes, peeled and diced (about 4 cups)
- 4 cups beef broth
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion for about 3-4 minutes until softened.
- Add minced garlic and ground beef; cook until the beef is browned (5-7 minutes), breaking it apart as it cooks.
- Stir in diced potatoes, beef broth, salt, pepper, and thyme; bring to a boil.
- Reduce heat and simmer for about 15-20 minutes until potatoes are tender.
- Lower heat and stir in milk and cheddar cheese until melted and creamy.
- Adjust seasoning if needed; serve hot with optional chopped green onions.
