  • 1 yellow onion, chopped
  • 2.5 cups biscuit mix
  • 1 cup water
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 4 ounces diced green chiles, drained
  • 1.5 cups shredded cheese (divided)
  • 1 teaspoon garlic powder
  • ½ cup salsa, mild
  • Cooking spray

Instructions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium-high heat, cook the ground beef until browned; drain excess fat.
  3. Add chopped onions and bell pepper to the skillet; cook for about 4 minutes until softened.
  4. In a mixing bowl, combine biscuit mix and water; press into a greased casserole dish and bake for 5-8 minutes.
  5. Spread the beef mixture over the biscuit layer.
  6. In another bowl, mix sour cream, mayonnaise, drained green chiles, garlic powder, and ¾ cup cheese; spread over beef layer.
  7. Dollop salsa on top and sprinkle remaining cheese.
  8. Bake uncovered for about 30 minutes until bubbly.
