Ingredients
- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 2.5 cups biscuit mix
- 1 cup water
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1.5 cups shredded cheese (divided)
- 1 teaspoon garlic powder
- ½ cup salsa, mild
- Cooking spray
Instructions
- Preheat oven to 350°F.
- In a large skillet over medium-high heat, cook the ground beef until browned; drain excess fat.
- Add chopped onions and bell pepper to the skillet; cook for about 4 minutes until softened.
- In a mixing bowl, combine biscuit mix and water; press into a greased casserole dish and bake for 5-8 minutes.
- Spread the beef mixture over the biscuit layer.
- In another bowl, mix sour cream, mayonnaise, drained green chiles, garlic powder, and ¾ cup cheese; spread over beef layer.
- Dollop salsa on top and sprinkle remaining cheese.
- Bake uncovered for about 30 minutes until bubbly.
