- 1 can sweetened condensed milk
- 1 can evaporated milk
- 1 cup coconut milk
- 4 large eggs
- 1 cup all-purpose flour
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- 1/2 cup sugar (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round baking pan.
- In a blender, combine sweetened condensed milk, evaporated milk, coconut milk, eggs, all-purpose flour, melted butter, and vanilla extract. Blend until smooth.
- Pour the batter into the prepared pan and bake for 45-50 minutes or until golden brown; check doneness with a toothpick.
- While the cake bakes, prepare the glaze by combining remaining coconut milk and sugar in a saucepan over medium heat. Bring to a boil then simmer for about 5 minutes.
- Once baked and cooled, invert the cake onto a serving plate. Drizzle warm glaze over top and garnish with shredded coconut.
