  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 5 cup heavy cream
  • 1 tablespoon lime juice
  • 25 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Season chicken with salt, pepper, and Cajun seasoning.
  2. In a Dutch oven, heat olive oil and sear the chicken until golden on both sides (about 5-7 minutes per side). Remove from pot and shred.
  3. Sauté onion, garlic, bell pepper, and jalapeño in the same pot until soft.
  4. Add chicken broth and white beans; stir in remaining Cajun seasoning.
  5. Return shredded chicken to pot and simmer for 20-30 minutes.
  6. Stir in cream cheese and heavy cream until smooth.
  7. Add lime juice before serving hot, garnished with cilantro.
