Ingredients
- 2 large chicken breasts (or thighs)
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 5 cup heavy cream
- 1 tablespoon lime juice
- 25 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Season chicken with salt, pepper, and Cajun seasoning.
- In a Dutch oven, heat olive oil and sear the chicken until golden on both sides (about 5-7 minutes per side). Remove from pot and shred.
- Sauté onion, garlic, bell pepper, and jalapeño in the same pot until soft.
- Add chicken broth and white beans; stir in remaining Cajun seasoning.
- Return shredded chicken to pot and simmer for 20-30 minutes.
- Stir in cream cheese and heavy cream until smooth.
- Add lime juice before serving hot, garnished with cilantro.
