Ingredients
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup cold butter
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 1/3 cup flour for topping
- 1/4 cup brown sugar
- 3 tbsp cold butter for crumbs
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- In a bowl, mix together flour, powdered sugar, and cold butter until crumbly. Press into the bottom of the prepared pan.
- In another bowl, use an electric mixer to beat cream cheese, granulated sugar, egg, and vanilla until smooth. Fold in blueberries gently.
- Spread the blueberry mixture over the crust.
- For the topping, mix flour and brown sugar with cold butter until coarse crumbs form. Sprinkle over the filling.
- Bake for 40-45 minutes until golden brown and set. Let cool completely before slicing into bars.
