Ingredients
- 1 lb rotini pasta
- 1 lb ground beef
- 2 cups shredded cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 2 cups chopped lettuce
- 1 cup thousand island dressing
- Salt and pepper to taste
Instructions
- Cook rotini pasta according to package directions until al dente. Drain and rinse with cold water; set aside to cool.
- In a large skillet, brown the ground beef over medium-high heat. Break into crumbles and season with salt and pepper. Drain excess fat and let cool.
- Dice tomatoes and red onion; chop lettuce into bite-sized pieces.
- In a large bowl, combine cooled pasta, ground beef, cheddar cheese, diced tomatoes, and red onion. Add dressing and mix thoroughly.
- Gently fold in chopped lettuce just before serving to maintain crispness.
