  • Handful of fresh cilantro
  • 5 tbsp cottage cheese
  • 3 tbsp mayo
  • Juice of 3 limes
  • Salt
  • Pepper
  • Large English cucumber
  • 1 avocado
  • 2 tbsp whipped cream cheese
  • Everything bagel seasoning
  • Chipotle hot sauce

Instructions

  1. In a mixing bowl, combine shredded chicken, diced red onion, chopped cilantro, cottage cheese, mayo, lime juice, salt, and pepper. Mix well.
  2. Cut the cucumber into thin strips lengthwise using a sharp knife or vegetable peeler.
  3. On each cucumber strip, spread whipped cream cheese and a spoonful of chicken salad mixture. Sprinkle with everything bagel seasoning and drizzle with chipotle hot sauce if desired.
