Ingredients
- 1 lb cooked, shredded chicken
- 1/2 red onion
- Handful of fresh cilantro
- 5 tbsp cottage cheese
- 3 tbsp mayo
- Juice of 3 limes
- Salt
- Pepper
- Large English cucumber
- 1 avocado
- 2 tbsp whipped cream cheese
- Everything bagel seasoning
- Chipotle hot sauce
Instructions
- In a mixing bowl, combine shredded chicken, diced red onion, chopped cilantro, cottage cheese, mayo, lime juice, salt, and pepper. Mix well.
- Cut the cucumber into thin strips lengthwise using a sharp knife or vegetable peeler.
- On each cucumber strip, spread whipped cream cheese and a spoonful of chicken salad mixture. Sprinkle with everything bagel seasoning and drizzle with chipotle hot sauce if desired.
- Carefully roll up each cucumber strip from the end with filling towards the opposite end. Secure with a toothpick if needed.
