Ingredients
- 2 cups cooked rice (preferably day-old)
- 1 cup thinly sliced beef tenderloin
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 large eggs
- Salt and pepper to taste
Instructions
- Prepare all ingredients ahead of time; refrigerate cooked rice.
- Heat vegetable oil in a skillet over medium-high heat and sauté the sliced beef until browned. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant.
- Add mixed vegetables and stir-fry until heated through.
- Push vegetables aside, scramble eggs in the skillet until fully cooked, then mix with vegetables.
- Add cooked rice, breaking up clumps, and stir well.
- Pour in soy sauce, sesame oil, black pepper; stir-fry for 3-4 minutes until heated through.
- Mix in the cooked beef and chopped green onions; heat thoroughly before serving.
