- 2 pounds new potatoes, washed and quartered
- 1/2 cup finely chopped red onion

- 1/4 cup apple cider vinegar

Instructions
- Boil the Potatoes: Place quartered new potatoes in a large pot, cover with cold water and add a pinch of salt. Bring to a boil over medium-high heat, then reduce heat and simmer until tender (10-15 minutes).
- Make the Dressing: In a medium bowl, whisk together red onion, parsley, apple cider vinegar, olive oil, Dijon mustard, sugar, salt, and black pepper until well combined.
- Combine Ingredients: Drain the potatoes using a colander and immediately transfer them to the bowl with dressing. Toss gently until all potatoes are coated.
