Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, cloves, and salt.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla until smooth.
- Combine wet and dry ingredients gently with a spatula; do not overmix.
- For the streusel topping: mix flour, brown sugar, granulated sugar, and cinnamon; cut in cold butter until crumbly.
- Divide muffin batter among muffin cups and sprinkle with streusel topping.
- Bake for 18–22 minutes or until a skewer comes out clean. Cool slightly before serving.
