- 1 ½ cups all-purpose flour
- ½ cup protein powder (vanilla or unflavored)
- ½ cup granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup milk (dairy or non-dairy)
- ½ cup peanut butter (or rehydrated peanut flour)
- ¼ cup vegetable oil or melted coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- Optional mix-ins: ½ cup chocolate chips or chopped peanuts
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, protein powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the milk, peanut butter (or rehydrated peanut flour), oil, egg, and vanilla until smooth.
- Combine wet ingredients into dry ingredients and stir gently until just mixed; fold in optional mix-ins if desired.
- Fill muffin cups about two-thirds full and bake for 18-22 minutes until a skewer comes out clean.
- Allow to cool before transferring to a wire rack.
