- 1 ½ cups all-purpose flour
- 1 cup rolled oats
- ½ cup granulated sugar
- ¼ cup packed light brown sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 large egg
- 1 cup milk
- ¼ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin pan with paper liners or grease it.
- In a large bowl, whisk together flour, oats, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, whisk egg, milk, vegetable oil (or melted butter), and vanilla extract until combined.
- Pour wet ingredients into dry ingredients and stir gently until just mixed; some lumps are okay.
- Fold in chocolate chips carefully.
- Divide batter evenly among muffin cups.
- Bake for 18-22 minutes or until a skewer comes out clean.
- Cool in the pan for a few minutes before transferring to wire racks.
