Instructions
- Preheat the oven to 400°F (200°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds.
- In another bowl, mix the egg, milk, oil (or melted butter), vanilla extract, lemon zest, and lemon juice until combined.
- Pour wet ingredients into dry ingredients and stir gently until just moistened; do not overmix.
- Divide batter evenly among muffin cups.
- Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
- Allow muffins to cool before serving.
