Ingredients
- 2 large chicken breasts (cut into bite-sized cubes)
- 2 cups cooked rice (white, jasmine, or brown)
- 1.5 cups corn kernels
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp chili powder
- 0.5 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
- 0.25 cup red onion thinly sliced
- 2 tbsp chopped cilantro
- 0.5 cup plain Greek yogurt
- 1 tbsp mayonnaise
- 1 clove garlic minced
- Juice and zest of 0.5 lime
- 1 tbsp finely chopped cilantro
Instructions
- Pat chicken dry and season with spices and olive oil.
- Heat a skillet over medium-high heat, add chicken in a single layer, and cook until browned (6-8 minutes).
- Remove chicken; char corn in the same skillet for 5-7 minutes.
- Mix yogurt, mayonnaise, lime juice, garlic, cilantro in a bowl for the sauce.
- Assemble bowls with warm rice topped with chicken, corn, red onion, and sauce.
