- 2 cups cooked shredded chicken
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 4 large lettuce leaves such as romaine or butter lettuce
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1/2 cup chopped fresh cilantro
- 1/4 cup chopped peanuts optional
Instructions
- In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth.
- In a large mixing bowl, combine shredded chicken with half of the peanut sauce until well coated.
- Lay out lettuce leaves on a clean surface; spoon chicken mixture onto each leaf.
- Top with shredded carrots, sliced bell peppers, and chopped cilantro.
- Drizzle with additional peanut sauce if desired.
- Fold sides of lettuce leaves over the filling and roll up tightly. Serve immediately.
