Ingredients
- 16 ounces rotini pasta
- 1 pound broccoli, chopped
- 1/2 cup red onion, diced
- 2 cups mayonnaise
- 1/2 cup apple vinegar
- 1/2 cup granulated sugar
- Salt and ground black pepper
Instructions
- Cook rotini pasta in boiling water until al dente. Drain and rinse under cold water.
- Blanch broccoli in boiling water for 2-3 minutes until bright green but crisp. Drain and rinse under cold water.
- In a mixing bowl, combine cooked pasta, broccoli, and diced red onion.
- In a separate bowl, whisk together mayonnaise, apple vinegar, sugar, salt, and pepper until smooth.
- Combine the dressing with the pasta mixture, tossing gently to coat evenly.
- Chill in the refrigerator for at least one hour before serving.
