Ingredients
- 1 box (16 oz) rotini noodles
- 2 cups chopped small dill pickles
- 8 oz colby jack cheese, diced
- 1 small white onion, minced
- 1/3 cup brine from dill pickles
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1/3 cup dill pickle liquid
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- 1/4 tsp salt
- 1/4 tsp ground black pepper
Instructions
- Cook the rotini noodles in salted boiling water until al dente. Drain and cool under cold water.
- Chop the dill pickles and mince the onion while the pasta cools.
- In a mixing bowl, combine mayonnaise, sour cream, dill pickle brine, fresh dill, salt, and pepper; mix well.
- Add cooled pasta, chopped pickles, and cheese to the dressing; toss gently to coat.
- Chill for at least one hour before serving.
