Instructions
- Preheat your oven to 375°F (190°C).
- Toss halved strawberries with honey, balsamic vinegar, and a pinch of salt in a mixing bowl. Spread on a parchment-lined baking sheet.
- Roast strawberries for 15–20 minutes until soft and caramelized.
- In another bowl, whip together ricotta cheese, olive oil, and a pinch of salt until smooth and fluffy.
- Toast the slices of bread until golden brown.
- Spread whipped ricotta generously on each slice and top with warm roasted strawberries.
- Drizzle with additional honey if desired and sprinkle with fresh thyme leaves before serving.
