- 3 large carrots

Instructions
- Peel and trim the carrots. Cut them into 3-4 inch pieces and slice thinly using a mandoline slicer.
- In a mixing bowl, whisk together olive oil, lime juice, apple cider vinegar, agave syrup, ground coriander, cayenne pepper (if using), and kosher salt until well combined.
- Add the sliced carrots to the dressing along with chopped parsley and sesame seeds. Toss until everything is evenly coated.
