- 8 oz wide Lo Mein noodles
- 1 lb ground beef
- 1 tablespoon peanut oil
- 1/2 cup low-sodium chicken broth
- 3 tablespoons rice vinegar
- 2 tablespoons dark soy sauce
- 4 cups coleslaw mix
- Sliced green onions for garnish
Instructions
- Cook the Lo Mein noodles according to package instructions, rinse under cold water, and set aside.
- In a skillet over medium heat, heat the peanut oil and brown the ground beef with sliced green onions until fully cooked.
- Whisk together the chicken broth, rice vinegar, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha to make the sauce.
- Add the cooked noodles and coleslaw mix to the skillet with the browned beef. Pour the sauce over everything and toss to coat.
- Cook for another 2-3 minutes until everything is evenly heated and well combined.
- Garnish with remaining sliced green onions before serving hot.
