Ingredients
- 1½ lb chicken breast (3-4 pieces, approx. 1 inch thick)
- 2 lb red potatoes (cut into bite-sized pieces)
- 1 lb fresh green beans (ends trimmed)
- 2 Tbsp olive oil
- 3-4 garlic cloves (2 for potatoes, 1 for green beans, 2 for chicken)
- ½ cup grated parmesan cheese
- ½ cup breadcrumbs (Italian or plain)
- ½ tsp cracked pepper
- ½ – ¾ tsp sea salt
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Line a baking sheet with parchment paper or spray with cooking oil.
- In a medium bowl, mix the potatoes with olive oil, minced garlic, parmesan, salt, and pepper; toss well.
- Spread the potatoes on one-third of the baking sheet and roast for 10-15 minutes.
- Meanwhile, combine the chicken with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and salt in a bowl; toss until coated.
- After roasting the potatoes, add the chicken to the sheet pan and toss green beans with olive oil, garlic, optional parmesan, salt, and pepper before adding around the chicken.
- Bake everything together for about 25 minutes or until chicken reaches an internal temperature of 165°F (74°C). Optionally broil for extra crispiness.
