  • lb chicken breast (3-4 pieces, approx. 1 inch thick)
  • 2 lb red potatoes (cut into bite-sized pieces)
  • 1 lb fresh green beans (ends trimmed)
  • 2 Tbsp olive oil
  • 3-4 garlic cloves (2 for potatoes, 1 for green beans, 2 for chicken)
  • ½ cup grated parmesan cheese
  • ½ cup breadcrumbs (Italian or plain)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper or spray with cooking oil.
  3. In a medium bowl, mix the potatoes with olive oil, minced garlic, parmesan, salt, and pepper; toss well.
  4. Spread the potatoes on one-third of the baking sheet and roast for 10-15 minutes.
  5. Meanwhile, combine the chicken with olive oil, minced garlic, parmesan, breadcrumbs, cracked pepper, and salt in a bowl; toss until coated.
  6. After roasting the potatoes, add the chicken to the sheet pan and toss green beans with olive oil, garlic, optional parmesan, salt, and pepper before adding around the chicken.
  7. Bake everything together for about 25 minutes or until chicken reaches an internal temperature of 165°F (74°C). Optionally broil for extra crispiness.
