Ingredients
- olive oil
- 1 lb ground turkey
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups frozen mixed vegetables
- 1 tsp dried oregano
- Salt and pepper to taste
- 4 slices of bread
- 1 cup shredded cheese (provolone or mozzarella)
- Butter for spreading
Instructions
- Begin by washing and chopping all vegetables: dice the onion and red bell pepper, and mince the garlic.
- In a large pot or Dutch oven over medium heat, heat olive oil. Add ground turkey and cook until browned.
- Stir in diced onion and bell pepper; sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute.
- Pour in beef broth and frozen mixed vegetables; stir in oregano, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for about 20 minutes.
- While soup simmers, preheat your oven to 375°F (190°C). Spread butter on both sides of each slice of bread, place on a baking sheet, and top with shredded cheese.
- Bake for 10–12 minutes until golden brown and bubbly.
- Serve generous portions of soup alongside warm cheesy toast.
