- 1 ½ cups old-fashioned rolled oats
- 1 ½ – 2 cups all-purpose flour
- 1 cup light brown sugar
- ½ teaspoon baking powder
- 1 teaspoon salt
- 1 cup cold, cubed butter
- 1 can sweetened condensed milk (approx. 395–410 g)
- Juice of 3 lemons (approx. 6–8 tablespoons)
- Zest of 3 lemons
Instructions
- Preheat your oven to 350°F (180°C). Line a square baking dish (about 9×9 inches) with parchment paper.
- In a large bowl, combine rolled oats, flour, brown sugar, baking powder, and salt. Add the cold butter cubes and mix until crumbly.
- Press half of the crumble mixture into the bottom of the prepared dish.
- In another bowl, mix sweetened condensed milk, lemon juice, and zest until smooth. Pour over the crust.
- Sprinkle the remaining crumble on top of the lemon filling.
- Bake for 25–30 minutes or until golden brown on top.
- Let cool completely before slicing into squares.
