Instructions
- Preheat oven to 400°F (200°C).
- In a mixing bowl, blend the cottage cheese, olive oil, and egg until smooth.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually combine the dry ingredients with the wet mixture until just blended.
- Fold in the chopped spinach and mozzarella cheese.
- Shape dough into bagel-like forms and place on a parchment-lined baking sheet.
- Bake for about 15 minutes until golden brown on top.
- Allow to cool slightly on a wire rack before serving.
