Ingredients
- 1 1/4 cups Butter (melted or substitute coconut oil)
- 1 1/2 cups Quick oats
- 2 1/4 cups All-purpose flour
- 1 1/2 cups Brown sugar (or coconut sugar)
- 1/4 cup Milk (or almond/oat milk)
- 2 teaspoons Vanilla extract
Instructions
- Preheat the oven to 300°F (150°C).
- Melt butter in a microwave-safe bowl.
- In a large bowl, mix melted butter with oats, flour, and brown sugar until crumbly.
- Press two-thirds of the mixture into the bottom of a greased 9×13 inch pan.
- In a saucepan over medium heat, melt additional butter for the caramel filling.
- Stir in brown sugar until smooth; add milk, vanilla extract, and flour.
- Bring to a gentle boil and simmer for three minutes until thickened.
- Pour caramel over the crust and top with reserved crust mixture.
- Bake for about 20 minutes until golden brown.
- Cool completely before slicing into bars.
