- 2 limes (juiced)

- Salt and pepper (to taste)
- 1 cup uncooked rice
- 1 avocado (diced)
- 1/2 cup cilantro (chopped)
- 1/4 cup sour cream
Instructions
- Marinate the chicken: In a bowl, mix honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken in the marinade and refrigerate for at least 30 minutes.
- Cook the rice: Prepare rice according to package instructions and set aside to cool.
- Grill the chicken: Heat a grill or skillet over medium heat. Cook marinated chicken for about 6-7 minutes per side until browned and cooked through.
- Make avocado rice: Combine cooked rice, diced avocado, chopped cilantro, and sour cream in a bowl. Mix gently until creamy.
- Assemble: On serving plates, layer creamy avocado rice topped with sliced honey lime chicken. Drizzle with additional lime juice if desired.
