- 14 oz cooked and shredded chicken
- 2 green onions, thinly sliced
- 2 oz plain yogurt
- 4 oz mayonnaise
- 1.5 tsp Dijon mustard
- 1/2 finely grated carrot
- 1.5 oz chopped spinach
- 1 oz diced tomatoes
- 1 finely diced celery stalk
- Zest and juice of half a lemon
- 1 oz grated Parmesan cheese
- Pinch of black pepper
- 1/2 tsp dried dill
- 6 tortillas (flour or whole wheat)
Instructions
- In a large mixing bowl, combine shredded chicken, green onions, yogurt, mayonnaise, Dijon mustard, grated carrot, chopped spinach, diced tomatoes, diced celery, lemon zest and juice, grated Parmesan cheese, black pepper, and dried dill. Mix until well blended.
- Lay a tortilla flat on your cutting board. Spoon an appropriate amount of chicken salad onto the center of the tortilla.
- Fold in the sides over the filling and roll tightly from one end to create a wrap.
- Repeat with remaining tortillas and filling. Slice each wrap in half diagonally if desired.
