- 10 oz fresh blueberries
- 1 cup plain flour
- 1/2 cup vanilla-flavored protein powder
- 3/4 cup thick Greek yogurt
- 1/2 cup extra-virgin olive oil
- 2 tbsp honey
- 1 large egg
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with olive oil or line it with paper liners.
- In a mixing bowl, combine Greek yogurt, olive oil, honey, egg, and vanilla extract; whisk until smooth.
- In another bowl, mix together plain flour, vanilla-flavored protein powder, baking powder, and baking soda until well blended.
- Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
- Fold in fresh blueberries carefully.
- Fill each muffin cup about three-quarters full with batter.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Allow muffins to cool in the pan for five minutes before transferring them to a wire rack.
