Ingredients
- 1 medium cucumber
- ½ small red onion
- 150g cooked chicken breast
- 160g low-fat Greek yogurt
- 1 clove garlic
- ½ squeeze of lemon or 1 tsp lemon juice
- 6ml olive oil
- Salt & pepper, to taste
Instructions
- Slice the cucumber and dice the red onion. Shred or dice the cooked chicken breast and mince the garlic.
- In a large mixing bowl, combine cucumber, red onion, chicken, Greek yogurt, garlic, olive oil, lemon juice, salt, and pepper.
- For extra zest, add optional lemon zest.
- Mix thoroughly until all ingredients are well-coated with dressing.
- Serve chilled immediately or store in the fridge for later enjoyment.
