Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, and salt.
- In another bowl, mix Greek yogurt, honey (or maple syrup), lemon juice, and lemon zest until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45-50 minutes until a toothpick comes out clean. Cool before slicing.
