- 1.5 lbs boneless, skinless chicken breasts
- ½ cup whole wheat flour
- 3 large eggs
- 1 cup whole wheat bread crumbs
- 1.5 cups marinara sauce
- 1.5 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ teaspoon black pepper
- 2 teaspoons dried basil
- 2 teaspoons dried parsley
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Butterfly and pound the chicken to about ¼ inch thickness.
- Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs mixed with half of the Parmesan cheese and seasonings.
- Bread each chicken cutlet by coating in flour, dipping in eggs, then pressing into breadcrumb mixture.
- Place breaded cutlets on the baking sheet and bake for 30 minutes total (15 minutes each side).
- Top each cutlet with marinara sauce and remaining mozzarella cheese; broil for 2 minutes until bubbly.
- Serve hot over pasta or alongside a fresh salad.
