- 1 lb boneless, skinless chicken breasts
- 3/4 cup gluten-free flour blend
- 2 large eggs
- Vegetable oil for frying
- 3/4 cup freshly squeezed orange juice
- 1 tablespoon orange zest
- 3 tablespoons gluten-free soy sauce
- 2 tablespoons honey or maple syrup
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon cornstarch
Instructions
- Cut the chicken into bite-sized pieces and pat dry.
- Beat the eggs in one bowl and place the gluten-free flour in another.
- Dip each chicken piece into the eggs and then coat with flour.
- Heat vegetable oil in a deep skillet to 350°F.
- Fry the chicken pieces in batches until golden brown (about 4-5 minutes per batch).
- In a saucepan, combine orange juice, zest, soy sauce, honey, garlic, and ginger over medium heat.
- Mix cornstarch with water to create a slurry; add to sauce until thickened.
- Toss the fried chicken with the sauce and serve immediately.
