Ingredients
- 1½ lbs sirloin steak (cut into bite-sized cubes)
- 1½ lbs baby potatoes (halved or quartered)
- 5-6 cloves garlic (minced)
- 4 tablespoons olive oil
- 4 tablespoons butter
- Salt, black pepper, paprika, and dried Italian herbs (to taste)
- Fresh parsley (for garnish)
Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the baby potatoes, season with salt, pepper, and paprika, and cook until golden brown and fork-tender (about 15 minutes). Remove from skillet.
- In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter. Season steak cubes with salt, pepper, and Italian herbs. Sear the steak in batches for about 2–3 minutes on each side until browned.
- Reduce heat to medium-low. Add remaining butter and minced garlic to the skillet; sauté for about 1 minute until fragrant.
- Return the cooked potatoes to the skillet with the steak and toss gently to combine flavors. Warm through for an additional 1–2 minutes.
- Garnish with freshly chopped parsley before serving hot.
