  • 1½ lbs baby potatoes (halved or quartered)

  • 4 tablespoons olive oil
  • 4 tablespoons butter
  • Salt, black pepper, paprika, and dried Italian herbs (to taste)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the baby potatoes, season with salt, pepper, and paprika, and cook until golden brown and fork-tender (about 15 minutes). Remove from skillet.
  2. In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter. Season steak cubes with salt, pepper, and Italian herbs. Sear the steak in batches for about 2–3 minutes on each side until browned.
  3. Reduce heat to medium-low. Add remaining butter and minced garlic to the skillet; sauté for about 1 minute until fragrant.
  4. Return the cooked potatoes to the skillet with the steak and toss gently to combine flavors. Warm through for an additional 1–2 minutes.
  5. Garnish with freshly chopped parsley before serving hot.
