- 4 boneless skinless chicken breasts
- 1.5 pounds baby Yukon Gold or red potatoes (halved)
- 4 cloves garlic (minced)
- Olive oil
- Italian seasoning
- Smoked paprika
- Grated Parmesan cheese
- Salt and black pepper
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine Italian seasoning, smoked paprika, salt, black pepper, and olive oil. Coat the chicken thoroughly with the mixture.
- In another bowl, toss halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and black pepper until evenly coated.
- Spread the seasoned potatoes on a baking sheet in a single layer. Place the seasoned chicken on top.
- Bake for about 30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden brown.
- Garnish with chopped parsley before serving.
