Ingredients
- 1.5 pounds beef stew meat
- 1 pound baby potatoes
- 4 tablespoons unsalted butter
- 3 cloves garlic
- 0.25 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 0.5 teaspoon dried thyme
- 0.5 teaspoon dried rosemary
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
Instructions
- Prepare ingredients by cutting beef into bite-sized pieces and halving the potatoes.
- Optionally, parboil the potatoes for a few minutes to soften.
- Heat olive oil in a skillet over medium-high heat and sear beef bites until browned.
- In a bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper to create the sauce.
- In a slow cooker, layer halved potatoes and seared beef; pour sauce over top and add beef broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
- Allow to rest for about 10 minutes before serving.
