  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 100 g caster sugar
  • 90 g demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional.
  2. Melt dark chocolate and butter in a heatproof bowl over simmering water, stirring occasionally until combined; add vanilla.
  3. In another bowl, whisk eggs and sugars until light and fluffy.
  4. Sift together flour, cocoa powder, baking powder, and salt; fold in chocolate chips.
  5. Combine melted chocolate with whipped egg mixture gently.
  6. Fold in dry ingredients until just combined; avoid overmixing.
  7. Scoop onto lined baking tray and bake for 12-14 minutes until set.
  8. Cool slightly before transferring to a rack.
