- 1 cucumber
- 1½ cups cherry tomatoes
- 8 oz fresh mozzarella
- ½ large red onion
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- Salt and pepper
Instructions
- In a small bowl, whisk together the olive oil, balsamic vinegar, oregano, basil, salt, and pepper to create the dressing.
- On a cutting board, peel and fork-score the cucumber before slicing it thinly. Quarter the cherry tomatoes and chop the red onion into small pieces.
- In a mixing bowl, combine the diced cucumber, cherry tomatoes, mozzarella, and red onion. Pour the dressing over everything and toss gently until well combined.
- Transfer the salad to a serving platter and enjoy immediately or chill for up to an hour to enhance flavors.
