- 1 cup all-purpose flour

- 1/2 cup coconut oil (or butter)
- 1 tsp vanilla extract
- 1 cup plant-based milk
- 1 cup tonic water
- Food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with liners.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix eggs, coconut oil, vanilla extract, and plant-based milk until smooth.
- Combine the wet and dry ingredients until just mixed.
- Gently stir in tonic water to achieve the glowing effect.
- Fill cupcake liners about ¾ full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool completely before frosting.
