Ingredients
- 1/2 English cucumber (cut into quarters lengthwise and sliced)
- 3 cups halved cherry tomatoes
- 1 cup diced fresh mozzarella
- 1 large diced avocado
- 1/3 cup chopped basil leaves
- 3 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic (peeled and either pressed or grated)
- Salt and pepper to taste
Instructions
- Wash all vegetables thoroughly. Cut the cucumber into quarters lengthwise and slice into bite-sized pieces. Halve the cherry tomatoes and dice the avocado.
- In a large mixing bowl, combine cucumber, tomatoes, avocado, mozzarella, and basil. Toss gently to mix.
- In a small bowl or jar, whisk together olive oil, balsamic vinegar, garlic, salt, and pepper. Adjust seasoning as needed.
- Pour the dressing over the salad mixture and toss gently until well-coated.
