Ingredients
- 1 cup turkey bacon bits (or substitute with cooked chicken)
- 8 large eggs
- 1 cup cottage cheese
- 1 1/4 cups shredded Colby Jack cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Cooking oil spray
Instructions
- Preheat your oven to 350°F (175°C).
- Generously spray a muffin tin with cooking oil spray.
- In a mixing bowl, whisk together the eggs until well blended. Add cottage cheese, turkey bacon bits (or chicken), shredded cheese, salt, pepper, and garlic powder; mix thoroughly.
- Pour the mixture into each muffin cup, filling them about three-quarters full.
- Bake in the preheated oven for 20-25 minutes until set and golden on top.
- Allow to cool slightly before gently removing from the tin.
