- 4 large tortillas (flour for flexibility)
- 6 large eggs
- 1 cup cheddar cheese (or pepper jack for spice)
- 1 cup cooked turkey sausage or veggie sausage
- 1 cup fresh veggies (bell peppers, onions, spinach)
- 1/2 cup sour cream or Greek yogurt
- Hot sauce (to taste)
Instructions
- Whisk the eggs in a bowl until blended. Heat a non-stick skillet over medium heat and cook the eggs until fluffy, about 3-4 minutes.
- In the same skillet, sauté chopped turkey or veggie sausage until browned and crispy, approximately 5-7 minutes.
- On a tortilla, layer scrambled eggs, sausage, cheese, diced veggies, and sour cream. Add hot sauce if desired.
- Fold the tortilla edges toward the center to create a wrap.
- Cook seam-side down in the skillet over medium heat for 3-4 minutes until golden brown; flip to repeat.
