Ingredients
- ¾ cup Greek yogurt
- 1 ½ tablespoons extra virgin olive oil
- 1 ½ tablespoons lemon juice
- ¼ teaspoon grated garlic
- ½ teaspoon fine salt
- ? teaspoon black pepper
- 1 ½ lb cucumbers, sliced
- ½ red onion, finely sliced
- ¼ cup fresh dill, chopped
Instructions
- In a small bowl, combine Greek yogurt, olive oil, lemon juice, garlic, salt, and black pepper. Mix until smooth and set aside.
- Slice the red onion and cucumbers into thin pieces.
- In a large mixing bowl, combine sliced cucumbers, red onion, and chopped dill. Pour the dressing over the vegetables and toss gently to coat.
- Serve immediately at room temperature or refrigerate until ready to enjoy.
