- 2 cups fresh tomatoes, chopped
- 4 cups cucumbers (spiralized or thinly sliced)
- Turkey bacon or crispy chickpeas for added crunch
Instructions
- In a mixing bowl, combine the sour cream and ranch seasoning mix until well blended.
- Chop the fresh tomatoes into bite-sized pieces. If using a spiralizer, spiralize the cucumbers; otherwise, slice them thinly.
- Add the chopped tomatoes and cucumbers to the dressing in the mixing bowl. Toss gently until coated.
- For added crunch, sprinkle in turkey bacon or crispy chickpeas and mix gently.
- Chill in the refrigerator for at least 30 minutes before serving to meld flavors.
