Instructions

  1. Preheat your oven to 250°F (120°C). Wash and dry the zucchinis, then slice them into thin rounds (about 1/8-inch thick) using a sharp knife or mandolin.
  2. Arrange the zucchini slices on paper towels and sprinkle with salt. Let them sit for about 10 minutes to draw out moisture, then pat dry with another paper towel.
  3. In a large bowl, toss the zucchini slices with olive oil and your chosen seasonings until evenly coated.
  4. Line a baking sheet with parchment paper and spread the zucchini slices in a single layer. Bake for 1.5 to 2 hours, flipping halfway through until golden brown and crispy.
  5. Check for doneness at around the 90-minute mark; if they’re still soft, bake longer.
