Ingredients
- 1 pound gnocchi
- 2 tablespoons olive oil
- 4 cups fresh spinach
- 4 ounces feta cheese, crumbled
- 2 cloves garlic, minced
- Salt and black pepper to taste
- Red pepper flakes (optional)
Instructions
- Boil a large pot of salted water. Add the gnocchi and cook until they float (2-3 minutes). Use a slotted spoon to remove them and drain.
- In a large frying pan, heat olive oil over medium-high heat. Add the gnocchi and cook undisturbed until golden brown on one side (about 2-3 minutes).
- Stir the gnocchi gently and cook for another 2-3 minutes until crispy on all sides.
- Reduce heat to medium and add minced garlic; sauté for about 1 minute until fragrant.
- Add fresh spinach and stir until wilted (2-3 minutes).
- Season with salt, black pepper, and red pepper flakes (if using). Remove from heat.
- Stir in crumbled feta cheese before serving immediately.
