- 18 oz cheese-stuffed tortellini
- 2 large eggs
- 1 cup grated Parmesan cheese
- 6 oz diced turkey strips
- 2 cloves minced garlic (optional)
- Freshly ground black pepper and salt to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to boil. Cook the tortellini according to package instructions until al dente, reserving 1/4 cup pasta water before draining.
- In a medium bowl, whisk together eggs and Parmesan until smooth.
- In a skillet over medium heat, cook turkey strips until crispy, about 5-7 minutes. Add garlic in the last minute if desired.
- Remove from heat and mix the drained tortellini into the skillet with turkey strips.
- Pour egg mixture over pasta while stirring constantly; gradually add reserved pasta water to achieve desired consistency.
- Season with black pepper and salt as needed, garnish with parsley, and serve immediately.
