Ingredients
- 225g penne pasta
- 450g lean ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup beef broth
- ¾ cup plain Greek yogurt
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente; drain and reserve ½ cup pasta water.
- In a skillet, heat olive oil over medium-high heat and brown the ground beef; drain excess fat.
- Sauté chopped onion and minced garlic in the skillet for 2–3 minutes.
- Stir in tomato paste and cook for an additional 1–2 minutes.
- Add beef broth and simmer for 3–5 minutes until thickened.
- Lower heat, mix in Greek yogurt and cheese until creamy; add reserved pasta water as needed.
- Combine cooked pasta with the sauce; season with salt and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
